Gravy

Ingredients

Directions

Make the gravy

  1. Combine the cloves, bay leaf, savory herbs, shallots or onion, and parsley root in a stewpan.

  2. Add the beef stock or broth and simmer slowly for 30 minutes.

  3. Boil the mixture for 20 minutes, ensuring the side of the stewpan turns reddish brown.

Thicken and finish

  1. If thickening is needed, stir in the flour and simmer for 3-4 minutes before adding the stock.

  2. Shake the pan frequently to detach the browning while the gravy is cooking.

What each ingredient does

Beef stock or strong broth
Forms the liquid base and carries the meaty flavour of the gravy.
Shallots or onion
Adds aromatic, savoury sweetness that deepens the flavour of the stock.
Flour
Thickens the liquid as its starch swells with heat, giving the gravy body.

The step that matters

Boiling until the pan side turns reddish brown. Browned proteins and sugars cling to the pan and give the gravy its colour and depth. Shaking the pan loosens them into the liquid, so the colour and flavour spread evenly instead of scorching in one spot.

Swap the clove

How well each one fits the dish's main ingredients (shallot, parsley, beef, flour):

  1. Capersfits better
  2. Tarragonfits better
  3. Thymefits better
  4. Clovethe original

Fit is the average pairing score against shallot, parsley, beef, flour. Candidates are from the same food group and used in at least 100 recipes.
