What each ingredient does

Lean meat
Provides the main savoury flavour and body of the gravy as it cooks down.
Butter
Carries the aromatics and helps the chopped vegetables and meat brown for deeper flavour.
Onion
Adds aroma and sweetness as it softens and browns in the fat.
Carrot
Adds subtle sweetness and body to the liquid as it simmers.

The step that matters

Remove any scum from the gravy. Scum is coagulated protein and impurities rising to the surface. Skimming it early keeps the gravy clear and prevents a dull, greyish, muddy flavour.
