Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Young asparagus
Provides the main body and flavour of the sauce once cooked and mixed.
Thickened veal gravy
Adds body and savoury depth to the sauce.
Egg yolks
Enrich the sauce and help it thicken and turn smooth when gently heated.
Good melted butter
Adds richness and a silky mouthfeel as an alternative finish.

The step that matters

Draining the asparagus in a hot strainer. Excess cooking water left on the asparagus would dilute the gravy or butter, so the sauce would be thin and less flavourful.

Swap the white pepper

How well each one fits the dish's main ingredients (asparagus, veal, egg, butter, lemon):

  1. Tarragonfits better
  2. Parsleyfits better
  3. Capersfits better
