What each ingredient does

Cucumbers
Provide the bulk of the sauce and soften and brown in the butter, adding body and flavor.
Butter
Browns the cucumbers and carries flavor through the sauce as a fat.
Flour (in the method)
Lightly coats the cucumbers, helping them brown and thickening the sauce as it cooks.
Beef broth or brown gravy
Forms the liquid base of the sauce, adding savory depth and meaty flavor.

The step that matters

Fry the cucumbers until golden brown. Browning through the butter and flour develops rich, savory flavor through the Maillard reaction. Pale, under-browned cucumbers leave the sauce tasting flat and watery.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (cucumber, butter, beef, pepper, vinegar):

  1. Capsicumfits better
