What each ingredient does

Lemons
Provide the main flesh and juice that soften and flavour the pickle over time.
Vinegar
Acidic liquid that preserves the lemons and draws out their sharp, tangy character.
Horseradish
Adds pungent heat that mellows during the long resting period.
Coarse sea salt
Draws moisture from the lemons and seasons the pickle while helping preserve it.

The step that matters

Sealing and resting the jar. The long rest lets the acid, salt and aromatics slowly penetrate the lemon rind and mellow the sharp flavours. Using it too early gives harsh, unbalanced results, so the jar needs to stay sealed and undisturbed for the full period.

Swap the mace

How well each one fits the dish's main ingredients (lemon, horseradish, garlic, vinegar, ginger, white pepper):

  1. Turmericfits better
  2. Dillfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against lemon, horseradish, garlic, vinegar, ginger, white pepper. Candidates are from the same food group and used in at least 100 recipes.
