Ingredients

Directions

Cure the tongue

  1. Rub the tongue with a handful of fine salt and let it drain overnight.

  2. Mix saltpetre, coarse sugar, and black pepper together, then rub the mixture over the tongue and add bruised juniper berries.

  3. After two days, add the coarse sea salt and let it sit for three more days.

  4. Pour treacle over the tongue and let it pickle for two weeks.

Smoke and finish

  1. Hang the tongue to drain, wrap it in brown paper, and smoke it over a wood fire for two to three weeks.

What each ingredient does

Beef tongue
Is the main cut; its dense muscle takes up the cure and becomes firm and sliceable.
Saltpetre
Helps preserve the meat and keeps it a pleasing pink colour during curing.
Coarse sea salt
Draws out moisture and seasons the meat, firming its texture during the long cure.
Treacle
Adds sweetness and a dark, rich flavour to the pickled surface.
Juniper berries
Contribute a resinous, aromatic flavour that penetrates the meat during curing.
Black pepper
Adds sharp, warm spice that balances the sweetness of the sugar and treacle.

The step that matters

Rubbing in the saltpetre and sugar mixture. Saltpetre must be evenly distributed over the whole tongue, because uneven coverage leaves some areas under-cured and open to spoilage. Thorough, even rubbing ensures the cure penetrates consistently through the thick muscle.
