What each ingredient does

Liver
Forms the main body of the stew and gives it its rich, meaty flavour.
Vinegar
Soaking in vinegar softens the liver and mellows its strong flavour.
Flour
Coats the liver pieces so they brown lightly and help thicken the stew.
Lemon juice or lemon pickle
Adds acidity that brightens the stew and balances the richness of the liver.
