Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Veal- Sydney

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the base

  1. Pour boiling veal stock or gravy over the bread crumbs and let them cool.

  2. Mix in the beef suet, minced veal, lemon rind, salt, cayenne, mace or nutmeg, and beaten eggs. Whisk the mixture until well combined.

Bake

  1. For better flavor, use gravy instead of cream and add a little clarified butter before pouring in the mixture.

  2. Pour into a buttered dish and bake at 350°F (175°C) for 45 minutes to 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the mixture and set into a firm, sliceable custard-like texture when baked.
Fine bread crumbs
Absorb the stock and help give the baked dish body and a soft crumb.
Beef suet
Adds fat that keeps the baked mixture moist and rich in flavor.
Cold roast veal
Provides the main meat body and savory flavor of the dish.

The step that matters

Pour boiling stock over the bread crumbs and let them cool. The hot liquid softens and swells the crumbs so they absorb it evenly; cooling before mixing keeps the beaten eggs from scrambling and lets the mixture set smoothly in the oven.

Swap the mace

How well each one fits the dish's main ingredients (bread, veal, beef, lemon, pepper, egg):

  1. Parsleyfits better
  2. Marjoramfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against bread, veal, beef, lemon, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
