What each ingredient does

Mutton shoulder
Forms the main meat, which becomes tender through long gentle stewing.
Salt
Draws moisture out of the meat and helps preserve it during the cure.
Sugar
Balances the salt and adds sweetness to the cured meat.
Beef broth
Provides the liquid for stewing and forms the base of the gravy.
Onion
Adds savoury depth to the stewing liquid and gravy.

The step that matters

Stewing the cured mutton gently. Cured meat is tough collagen-rich muscle; slow, gentle heat over several hours breaks down connective tissue into gelatin. A rapid boil toughens and dries the meat, so the liquid should only simmer.

Swap the mace

How well each one fits the dish's main ingredients (mutton, sugar, clove, pepper, ginger, beef, onion):

  1. Cinnamonfits better
  2. Cardamomfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against mutton, sugar, clove, pepper, ginger, beef, onion. Candidates are from the same food group and used in at least 100 recipes.
