Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton cutlets
Provide the main meat, whose connective tissue softens into tender, rich pieces during long simmering.
Potatoes
Release starch as they cook, thickening the broth and giving the stew body.
Onions
Add sweetness and savoury aroma as they soften in the broth.

The step that matters

Let the stew simmer gently. Keeping the liquid at a gentle simmer lets the meat's connective tissue break down slowly, so it turns tender. A hard, rolling boil toughens muscle fibres and can break up the potatoes.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (mutton, potato, pepper):

  1. Carrotfits better
  2. Capsicumfits better
  3. Tomatofits about as well
  4. Onionthe original

Fit is the average pairing score against mutton, potato, pepper. Candidates are from the same food group and used in at least 100 recipes.
