To Roast Pork

Ingredients

Directions

  1. Score the skin of the pork in narrow strips before roasting.

  2. Place the pork at a distance from the heat initially to heat through without hardening the skin.

  3. Baste the pork constantly while roasting.

  4. For stuffing, loosen the skin from the knuckle and insert the stuffing as much as possible.

  5. Brush the skin with clarified butter or salad oil if the meat is not very fat.

  6. Roast the leg of pork for 3 hours, loin for 2 to 2.5 hours, and spare rib for 1.5 hours.

What each ingredient does

Leg of pork
Forms a large main roast whose fat and skin render and crisp during cooking.
Loin of pork
Provides a leaner main roast that stays juicy when basted during cooking.
Spare rib of pork
Provides a fatty main roast whose fat keeps the meat moist as it cooks.
Clarified butter or salad oil
Helps the skin brown and crisp and keeps the surface from drying out.

The step that matters

Place the pork away from the heat at first. Strong direct heat at the start seizes and toughens the skin before the centre warms. A gentler start lets the meat heat through evenly, so the skin can crisp later without the interior lagging behind.

Swap the apple

How well each one fits the dish's main ingredients (pork, butter):

  1. Applethe original
  2. Coconutfits about as well
  3. Avocadofits less well
  4. Peachfits less well

Fit is the average pairing score against pork, butter. Candidates are from the same food group and used in at least 100 recipes.
