Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the main lean, tender body of the cakes.
Lean pork
Adds savoury meaty flavour and binds the mixture into a cohesive cake.
Inside fat of pig
Adds moisture and richness, keeping the cakes juicy as they cook.
Flour
Forms a light dusting that helps the cakes brown in the butter.

The step that matters

Fry the cakes in a little butter for about 10 minutes. Cooking over moderate heat lets the surface brown while the interior cooks through. Too much heat can scorch the flour and butter before the centre is done, while too little leaves the cakes pale and greasy.

Swap the mace

How well each one fits the dish's main ingredients (veal, pork, pepper, nutmeg, flour, butter):
