What each ingredient does

Turkey
Forms the main joint; its lean meat cooks through and needs basting to stay moist.
Forcemeat or sausage meat
Stuffs the breast, adding fat and seasoning that keep the lean meat moist and flavourful.
Butter
Basting fat that promotes even browning and a rich, golden skin.

The step that matters

Basting constantly with butter until cooked through. Turkey breast is lean and dries out easily. Frequent basting coats the surface with fat, which helps the skin brown and slows moisture loss during roasting.

Swap the chestnut

The recipe marks chestnut as optional. How well each one fits the dish's main ingredients (turkey, meat, butter):

  1. Chestnutthe original
  2. Lima beansfits about as well
  3. Walnutfits about as well
  4. Nutsfits about as well

Fit is the average pairing score against turkey, meat, butter. Candidates are from the same food group and used in at least 100 recipes.
