Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
To Boil Rabbits
Ingredients
Directions
Choose young rabbits and wash them well.
Soak the rabbits and truss them firmly with heads turned and skewered to the sides.
Drop the rabbits into plenty of boiling water and simmer gently for 30 to 45 minutes.
Cover the rabbits with rich white sauce mixed with the pounded livers, seasoned with cayenne and lemon juice.
Alternatively, serve with white onion sauce, parsley and butter made with milk or cream, or mushroom sauce.
