To Roast a Pheasant

Ingredients

Directions

Prepare the bird

  1. Pluck the feathers from the pheasant and cut a slit in the back of the neck to remove the crop.

  2. Draw the bird and clean the inside with a damp cloth or rinse with water; wipe the outside with a dry cloth.

  3. Cut off the toes and tuck the head under the wing with the bill along the breast.

  4. Skewer the legs without crossing them and flour the pheasant well.

Roast and serve

  1. Roast over a brisk fire, basting constantly with well-flavored butter.

  2. Roast for about 45 minutes, less if you prefer it underdone, or longer for thorough cooking.

  3. Serve with bread sauce and brown gravy.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pheasant
Is the main cut of meat, cooked whole so the skin and flesh set and brown together.
Well-flavored butter
Basting fat that carries flavor over the skin and promotes browning as it cooks.
Flour
Dusted over the bird to help form a crisp, browned outer surface.

The step that matters

Basting constantly while roasting. Lean game birds dry out quickly over high heat, and regular basting with butter keeps the surface moist and encourages even browning.
