What each ingredient does

Partridges
The main protein; cooked through during roasting while the stuffing gently heats inside.
Mushrooms
Add moisture and savoury, earthy flavour to the stuffing as they soften in butter.
Butter
Carries flavour and adds fat, helping the mushrooms soften and brown lightly.

The step that matters

Roast for 30 to 40 minutes, or until cooked through. Partridge is lean and dries out quickly, while the stuffing must also reach a safe, fully hot temperature. Checking the centre of the bird, rather than relying only on time, helps balance both.
