Stewed Cucumbers

Ingredients

Directions

Prepare

  1. Peel and quarter the cucumbers, removing the seeds.

  2. Cut each quarter in half and sprinkle with white pepper or cayenne and flour.

Fry and stew

  1. Fry the cucumbers lightly in butter until golden.

  2. Remove from the pan and drain on a sieve.

  3. Place the cucumbers in a pot with enough brown gravy to nearly cover them.

  4. Stew gently for 25 to 30 minutes until tender.

Finish the gravy

  1. If the gravy needs thickening, remove the cucumbers and keep them warm.

  2. Stir in a little flour and butter to the gravy to thicken it.

  3. Add lemon juice, chili vinegar, or cucumber vinegar to taste, if desired.
