Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Endive
Forms the crisp, slightly bitter base of the salad.
Olive oil
Coats the leaves, adding fat and a smooth mouthfeel to the dressing.
Vinegar
Adds acidity that brightens the flavour of the leaves and oil.

The step that matters

Drying the endive. Leftover water dilutes the dressing so it slides off the leaves instead of clinging. Drying thoroughly before adding oil, vinegar and salt keeps the dressing where it belongs and the leaves crisp.

Swap the endive

How well each one fits the dish's main ingredients (tarragon, olive, vinegar):

  1. Mustardfits about as well
  2. Shallotfits about as well
  3. Lettucefits about as well
  4. Endivethe original

Fit is the average pairing score against tarragon, olive, vinegar. Candidates are from the same food group and used in at least 100 recipes.
