Why it works: Lettuce and endive match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 284 recipes. Both carry trans-2-hexenal, which smells green, leafy. The science ↓
To Boil Sprouts, Cabbages, Savoys, Lettuces, or Endive
Ingredients
Directions
Fill a large pot with water and add salt and a small amount of baking soda. Bring to a rapid boil.
Wash the endive, sprouts, and spring greens thoroughly before boiling.
Soak savoys, large lettuces, and close-leaved cabbages in salted water for at least 30 minutes to remove insects.
Trim the stems, remove decayed leaves, and cut the vegetables in half or quarters.
Boil very young greens for 15 to 20 minutes, lettuces for 20 to 30 minutes, and large savoys or cabbages for 1 to 1.5 hours.
Check if the stalk of the cabbage is tender to determine if it is done.
