Modern Chicken Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Remove bones from the chicken joints and season the flesh with salt, cayenne, mace, and nutmeg.

Assemble the pie

  1. Line a dish with a thin layer of pastry.

  2. Spread a layer of sausage meat over the pastry.

  3. Place a layer of chicken joints on top, followed by more sausage meat, repeating until the dish is full.

  4. Roll out the pastry for the cover, secure the edges, and trim off excess.

  5. Make an incision in the top and decorate with pastry leaves.

Glaze and bake

  1. Glaze the pie with egg yolk.

  2. Bake in a preheated oven at 400°F (200°C) for 1.5 to 2 hours.

  3. Cover with parchment paper if the crust browns too quickly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken (in the method)
Provides the main meat filling, becoming tender and juicy as it cooks through.
Sausage meat
Adds moisture and richness, keeping the chicken layers succulent during baking.
Pastry
Forms the enclosing crust that holds the filling and bakes to a crisp, golden shell.
Egg yolk
Gives the crust a glossy, golden-brown browning when brushed on before baking.
Nutmeg
Adds warm, aromatic flavour that complements the chicken and sausage meat.

The step that matters

Covering the crust during baking. Pastry browns faster than the filling heats through. Covering it with parchment when it darkens prevents burning while the chicken and sausage finish cooking over the long bake.

Swap the mace

How well each one fits the dish's main ingredients (pepper, nutmeg, meat, egg):

  1. Cinnamonfits better
  2. Parsleyfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against pepper, nutmeg, meat, egg. Candidates are from the same food group and used in at least 100 recipes.
