Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard base

  1. Pour boiling milk over the bread crumbs and butter in a bowl.

  2. Cover and let stand until the bread is well soaked.

  3. Stir in sugar, egg yolks, candied orange rind, and nutmeg until combined.

  4. Once the mixture is nearly cold, pour it into a baking dish.

Top and bake

  1. Top with beaten egg whites mixed with sifted sugar.

  2. Bake in a moderate oven at 350°F (175°C) for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fine bread crumbs
Soak up the hot milk and form the soft, absorbent body of the pudding.
Eggs
Yolks set the custard and add richness; beaten whites lighten the topping as it bakes.
New milk
Provides liquid that softens the crumbs and sets with the eggs into a custard.
Sugar
Sweetens the custard and helps the beaten whites stay glossy and stable.
Butter
Adds fat for richness and a softer, more tender crumb.

The step that matters

Let the mixture cool nearly to room temperature before pouring it into the dish. Adding the egg yolks to very hot milk can scramble them, leaving a grainy texture. Cooling it first lets the custard set smoothly in the oven.

Swap the orange

How well each one fits the dish's main ingredients (bread, butter, milk, sugar, egg, nutmeg):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better
  4. Orangethe original

Fit is the average pairing score against bread, butter, milk, sugar, egg, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
