What each ingredient does

Green gooseberries
Provide the fruit, pectin and tartness that give the jam its body and bright flavour.
Powdered sugar
Sweetens the jam and helps it thicken and set as it cooks down.

The step that matters

Boiling the mixture quickly while stirring constantly. Sugar and fruit must reach a rolling boil so the pectin and acid can gel the jam. Stirring prevents scorching on the bottom of the pan, which would give a burnt taste.
