What each ingredient does

Barberries
Provide the tart flavor and the color of the jelly.
Sugar
Adds sweetness, helps the jelly set, and acts as a preservative.

The step that matters

Boil the mixture for 10 minutes. Sugar and fruit juice must reach the right concentration to gel. Boiling too briefly can leave the jelly runny, while boiling too long can over-thicken it and darken its flavor.
