What each ingredient does

Red cabbage
Forms the bulk of the pickle and holds its crunch and color once packed in vinegar.
Coarse sea salt
Draws moisture out of the cabbage so it drains and becomes less watery before pickling.
Vinegar
Acidifies the cabbage, preserving it and giving the pickle its sharp flavor.
Black pepper
Adds aromatic heat to the vinegar that flavors the cabbage as it pickles.

The step that matters

Draining the cabbage with salt. Salt pulls water out of the shredded cabbage by osmosis. If the cabbage is not drained well and pressed dry, excess water dilutes the vinegar and leaves the pickle soft and watery.

Swap the cabbage

How well each one fits the dish's main ingredients (vinegar, pepper):

  1. Capsicumfits better
  2. Mustardfits about as well
  3. Cabbagethe original
  4. Cucumberfits less well

Fit is the average pairing score against vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
