Cambridge Milk Punch

Ingredients

Directions

Make the punch base

  1. Combine 2 quarts of new milk, thinly pared rind of 1 lemon, and ½ pound sugar in a pot.

  2. Slowly bring the mixture to a boil, then remove the lemon rind.

Finish and serve

  1. Take the pot off the heat and stir in the well-whisked eggs mixed with ½ pint cold milk, strained through a sieve. Do not allow the mixture to boil after adding the eggs.

  2. Gradually add 1 pint rum and ½ pint brandy, froth the punch, and serve immediately in warm glasses.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the creamy body of the punch and softens the spirits' bite.
Eggs
Thicken the punch gently and add richness and body when heated carefully.
Sugar
Adds sweetness that balances the alcohol and the lemon rind.
Rum
Provides the main spirit flavour and alcoholic strength.
Brandy
Adds a second spirit layer with fruity, warming depth.

The step that matters

Do not let the mixture boil after adding the eggs. Egg proteins set and curdle when overheated, turning the punch grainy. Holding the mixture just warm and straining it keeps it smooth and silky.

Swap the orange

The recipe marks orange as optional. How well each one fits the dish's main ingredients (milk, lemon, sugar, egg, rum, brandy, clove):

  1. Vanillafits better
  2. Figfits about as well
  3. Orangethe original
  4. Applefits about as well

Fit is the average pairing score against milk, lemon, sugar, egg, rum, brandy, clove. Candidates are from the same food group and used in at least 100 recipes.
