What each ingredient does

Cucumbers
Provide the main body and fresh, mild flavour of the soup.
Lettuce hearts
Add soft body and mild sweetness as they cook down into the broth.
Onions
Build savoury depth as they soften during the long gentle cooking.
Butter
Adds richness and a silky mouthfeel to the finished soup.
Young peas
Add sweetness, colour and a tender texture added at the end.

The step that matters

Bring to a gentle boil until the butter rises and clears. Boiling too hard can break the emulsion and leave the butter greasy, while too little heat leaves it unclear. Gentle heat lets the fat separate cleanly to the surface so it can be skimmed off clear.

Swap the mint

The recipe marks mint as optional. How well each one fits the dish's main ingredients (cucumber, lettuce, onion, parsley, butter, white pepper, peas):

  1. Tarragonfits better
  2. Capersfits better
  3. Thymefits better
  4. Mintthe original
