What each ingredient does

Cod
Forms the main body of the dish, becoming flaky and tender when gently cooked.
Veal gravy or broth
Provides the liquid base that the fish stews in and carries the savoury flavour of the sauce.
Bread crumbs
Absorb liquid and help thicken the sauce, giving it body.
Arrowroot
Thickens the sauce to a glossy, smooth consistency without making it cloudy.
White wine
Adds acidity and aromatic depth to the sauce.
Essence of anchovies
Adds a concentrated savoury, salty depth to the sauce.

The step that matters

Adding the arrowroot to the sauce. Arrowroot must be mixed in evenly before boiling, or it clumps and thickens unevenly. Once it reaches the boil it thickens quickly, so the sauce should be kept moving and boiled only for the stated time to avoid a gluey or thinned result.

Swap the mace

How well each one fits the dish's main ingredients (fish, veal, bread, arrowroot, white wine, lemon):

  1. Capersfits better
  2. Marjoramfits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against fish, veal, bread, arrowroot, white wine, lemon. Candidates are from the same food group and used in at least 100 recipes.
