What each ingredient does

Oysters
Form the main filling and provide the rich, briny flavour of the sausages.
Bread crumbs
Bind with the egg and form a coating that browns when broiled.
Beef suet
Adds fat that keeps the sausages moist and tender as they cook.
Eggs
Bind the mixture and help the bread crumb coating adhere to the oysters.

The step that matters

Broil the oysters gently. Gentle heat sets the egg and crumb coating and browns it lightly without drying out the oysters or the suet. High heat can scorch the crumbs before the inside heats through.
