What each ingredient does

Kidneys
Form the main body of the gravy and give it its rich, meaty flavour.
Butter
Carries flavour and adds richness while the kidneys and onion cook.
Onion
Adds sweetness and savoury depth as it softens in the fat.
Boiling water
Forms the liquid base that the kidneys and onion simmer into a thick gravy.

The step that matters

Cook until most moisture evaporates. Driving off most of the moisture before adding water concentrates the flavour and lets the kidneys brown slightly in the fat, so the gravy tastes deep rather than watery.
