What each ingredient does

Asparagus
Provides the main flavour and the body of the sauce once cooked and chopped.
Egg yolks
Thicken the sauce as they set gently with heat, adding richness.
Thickened veal gravy
Gives the sauce its savoury base and body.
Melted butter
Adds fat for a smooth, rich texture and mouthfeel.
Lemon juice
Adds acidity that brightens the flavour of the asparagus and butter.

The step that matters

Drain the asparagus thoroughly in a hot strainer. Residual water dilutes the sauce and makes it thin. Draining well keeps the asparagus from watering down the gravy or butter, so the sauce holds its consistency.

Swap the white pepper

How well each one fits the dish's main ingredients (asparagus, veal, egg, butter, lemon):

  1. Tarragonfits better
  2. Parsleyfits better
  3. Capersfits better
  4. White pepperthe original
