What each ingredient does

Cucumbers
Form the main body of the sauce, softening into a soft, mild purée when cooked and strained.
Béchamel or thick white sauce
Thickens the cucumber purée and gives it a smooth, creamy body.
Veal gravy
Adds a savoury, meaty base that carries the cucumber flavour.
Egg yolks
Enrich the sauce and thicken it gently as they warm, adding richness.
Butter
Adds fat for richness and a smoother mouthfeel when cucumbers are stewed in it.
Chili vinegar or lemon juice
Adds acidity that brightens the rich sauce and balances its flavour.

The step that matters

Stir in the egg yolks before serving. Egg yolks thicken through gentle heat. If the sauce boils after they are added, the proteins can scramble and the sauce turns grainy, so it should be kept hot but not boiling.
