What each ingredient does

Meat (in the method)
Provides the protein that becomes tender and absorbs the curry flavour as it cooks.
Butter
Carries the curry paste's aroma and gives the dish richness.
Curry paste
Supplies the main spice flavour and aroma of the dish.

The step that matters

Mixing in the curry paste. Spices bloom and turn more aromatic when fried briefly in fat, but scorch and turn bitter if the heat is too high, so keep the heat moderate and stir constantly.
