Why it works: Cucumber and lemon match in chemistry and in kitchens. They rank in the top 9% of all ingredient pairs, and cooks put them together in 2,067 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Stewed Cucumbers

Ingredients

Directions

Prepare

  1. Peel and quarter the cucumbers, removing the seeds, then cut each quarter in half.

  2. Sprinkle with white pepper or cayenne and dust the cucumbers lightly with flour.

Fry

  1. Fry in butter until golden.

  2. Remove from the pan and drain on a sieve.

Stew and finish

  1. Place the cucumbers in a pot with enough brown gravy to nearly cover them.

  2. Stew gently for 25 to 30 minutes until tender.

  3. If the gravy needs thickening, remove the cucumbers and keep them warm.

  4. Stir a little flour and butter into the gravy.

  5. Add lemon juice or chili vinegar for flavor.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Main vegetable that softens during stewing and absorbs the gravy's flavor.
Flour
Dusting helps the cucumbers brown when fried; stirred in later to thicken the gravy.
Butter
Fat for frying that gives the cucumbers a golden, savoury crust.
Brown gravy
Liquid that simmers the cucumbers and provides the main savoury flavor of the sauce.

The step that matters

Stewing until tender while thickening the gravy. Cucumbers become soft and watery if overcooked, and flour stirred into hot gravy can clump unless it is mixed in smoothly with butter first.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (cucumber, white pepper, flour, butter):

  1. Avocadofits better
  2. Lemonthe original
  3. Limefits about as well
  4. Raisinfits about as well

Fit is the average pairing score against cucumber, white pepper, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
