What each ingredient does

Green gooseberries
Provide natural pectin and acidity, which help the jam set.
Powdered sugar
Adds sweetness, helps the jam set, and preserves the fruit.

The step that matters

Boil quickly for 45 minutes with constant stirring. Sustained rapid boiling evaporates water so the sugar, pectin and acid concentrate enough to set. Constant stirring prevents the sugar and fruit from scorching on the base of the pan.
