What each ingredient does

Gooseberries
Provide the fruit body and tartness that form the base of the jam.
Sugar
Sweetens the fruit and, once dissolved, forms the syrup that preserves it.

The step that matters

Pour the hot syrup over the gooseberries immediately after removing from heat. Pouring the syrup while it is still hot helps the sugar penetrate the fruit evenly and keeps the gooseberries from drying unevenly or spoiling before the soaking begins.
