Brandied Morella Cherries

Ingredients

Directions

Prepare the cherries

  1. Cut off half the length of the stalks from the cherries.

  2. Gently drop the cherries into clean, dry quart bottles with wide necks.

Fill and seal

  1. Leave enough space in each bottle for 4 ounces of sugar-candy.

  2. Fill the bottles entirely with French brandy.

  3. Cork the bottles closely to prevent the fruit from shriveling.

  4. Add optional cherry or apricot kernels, or a small portion of cinnamon if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Morello cherries
Provide the fruit that softens and flavours the brandy as it steeps.
White sugar-candy
Adds sweetness to the brandy and slowly dissolves as the liquid steeps.
French brandy
Acts as the preserving liquid that soaks into the fruit and carries its flavour.

The step that matters

Cork the bottles closely. A tight seal keeps air out and holds the alcohol in the bottle, so the fruit stays plump instead of drying and shriveling.

Swap the cherry

The recipe marks cherry as optional. How well each one fits the dish's main ingredients (sugar, brandy):

  1. Vanillafits better
  2. Apricotfits better
  3. Raisinfits better
  4. Cherrythe original

Fit is the average pairing score against sugar, brandy. Candidates are from the same food group and used in at least 100 recipes.
