What each ingredient does

Beef leg
Bones and meat release gelatin and savory flavor into the broth as it cooks.
Mutton neck scrag end
Adds bones and meat that enrich the broth with additional body and flavor.
Onion
Stuck with cloves, it contributes aromatic sweetness to the broth.

The step that matters

Skim off any foam after bringing to a boil. Foam carries impurities and coagulated proteins that can cloud the broth and muddy its flavor if left in the pot.
