Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Boiling Poultry

Ingredients

Directions

Prepare the turkey

  1. Pluck the turkey, draw it at the rump, cut off the legs, tuck the ends of the thighs into the body, and tie them with string.

  2. Remove the head and neck.

  3. In a bowl, mix the grated bread, chopped oysters, lemon peel, salt, pepper, nutmeg, butter, eggs, and cream to make a light stuffing.

  4. Stuff the turkey's cavity with part of the mixture and form the rest into balls.

  5. Sew up the turkey and dredge it with flour.

Cook and serve

  1. Place it in a kettle of cold water and cover it tightly.

  2. Bring to a boil, skimming off any scum that rises.

  3. Once boiling, reduce heat and simmer gently for 30 minutes.

  4. Remove from heat and let it sit covered to finish cooking in the steam.

  5. Serve the turkey with oyster sauce poured over it and the stuffing balls arranged around it.

  6. Garnish with barberries and lemon.

What each ingredient does

Turkey
Forms the main body of the dish, cooked gently in water until tender.
Penny loaf
Bread crumbs absorb the butter and eggs, giving the stuffing a light, moist body.
Oysters
Provide the briny, savoury flavour that defines the stuffing and sauce.
Eggs
Bind the stuffing together and help it set as it cooks.
Butter
Adds richness and moisture to the stuffing.
Cream
Softens the stuffing and adds moisture for a lighter texture.

The step that matters

Simmer gently after boiling. Once the water boils, lowering the heat to a gentle simmer keeps the turkey cooking evenly. A hard boil toughens the meat and can break the surface, while gentle heat lets the egg-bound stuffing set without curdling or becoming dense.
