Apple Pie

Ingredients

Directions

  1. Prepare a puff pastry crust and place it around the edge of a pie dish.

  2. Peel, quarter, and core the apples.

  3. Layer half the apples in the dish, sprinkle with half the sugar, lemon zest, and a little lemon juice.

  4. Add a few cloves and the remaining apples and sugar, with another squeeze of lemon juice.

  5. Boil the apple peels and cores with a blade of mace in water until flavored, strain, add sugar, and reduce.

  6. Pour the reduced liquid into the pie, cover with the crust, and bake in the oven.

  7. For the filling, beat the yolks of two eggs with cream, nutmeg, and sugar over low heat until near boiling.

  8. Remove the pie lid and pour the egg mixture inside.

  9. Cut the crust into small triangles and place them on top of the pie.
