Why it works: Mace and nutmeg are a kitchen classic. They rank in the top 4% of all ingredient pairs, and cooks put them together in 6,557 recipes. Both carry myristicin, which smells spice, warm. The science ↓
Pheasant Soup
Ingredients
Directions
Prepare the pheasants
Roast the pheasants until half cooked, then flour them thickly.
Once cooled, remove the flesh from the breasts and set aside, covering it to keep it fresh.
Carve the remaining parts of the birds into joints and bruise the bodies.
Make the soup
Stew the pheasants gently in the beef broth for 2 to 3 hours.
Strain the soup and press out as much liquid as possible from the pheasants.
Let the soup cool, then remove the skins from the breasts.
Finish the soup
Mince the skins and pound them into a fine paste with the butter and bread crumbs.
Season the mixture with cayenne, salt, mace, and nutmeg to taste.
Prepare the rice separately and add as needed to the soup.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Pheasants
- Provide the main meat and flavour of the soup, with the flesh and bones giving body to the broth.
- Beef broth
- Forms the liquid base of the soup and carries the flavour of the birds.
- Fresh butter
- Adds richness and a smooth, silky texture to the pounded skin paste.
- Dry bread crumbs
- Bind with the butter and skins to give the paste a thicker, spreadable body.
- Rice
- Adds bulk and gentle starch to thicken the soup when added.
The step that matters
Pounding the skins into a paste. Skins must be minced finely and worked smoothly with butter and crumbs; coarse pieces stay chewy and the paste will not blend evenly into the soup.
