What each ingredient does

Rice
Its starch swells and softens during simmering, giving the soup body and thickening it.
Butter
Adds richness and fat, carrying flavor and smoothing the soup's texture.
Flour
Forms a roux with the butter that helps thicken the soup.
Egg yolks
Enrich and thicken the soup as they set gently with heat.
Onions
Contribute savory depth and mild sweetness to the broth as they cook.
Carrots
Add natural sweetness and color to the broth as they cook.

The step that matters

Adding the egg yolks. Egg yolks scramble if they meet hot liquid directly. Whisking them with a little milk and gradually adding some hot soup first, then stirring the mixture back in over very low heat, lets them thicken the soup smoothly.

Swap the onion

How well each one fits the dish's main ingredients (celery, carrot, rice, butter, flour, pepper, egg):

  1. Leekfits better
  2. Parsnipfits better
  3. Capsicumfits better
  4. Onionthe original
