Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Melts to form the rich base that carries the other flavours.
Flour
Thickens the butter and cream into a smooth, cohesive sauce.
Cream
Adds moisture and body, giving the sauce a smooth, rich texture.
Essence of anchovies
Adds a salty, savoury depth of flavour to the sauce.

The step that matters

Stirring in the cream. Cream added gradually while stirring keeps the flour evenly dispersed, so the sauce thickens smoothly rather than forming lumps. Keep stirring until it boils so the starch fully thickens.
