What each ingredient does

Young asparagus
Forms the body of the sauce and gives its vegetable flavor and texture.
Thickened veal gravy
Adds body and savory depth to the sauce.
Egg yolks
Thicken the sauce and give it a smooth, rich texture as they set gently with heat.
Melted butter
Adds richness and a silky mouthfeel to the asparagus.
Lemon juice
Adds acidity that brightens the flavor of the asparagus and butter.

The step that matters

Serve immediately to avoid discoloration.. Asparagus contains pigments and acids that change color as they sit and react with air and heat, so the sauce looks dull if held too long. Serving promptly keeps the bright green color and fresh flavor.

Swap the white pepper
