What each ingredient does

Small button mushrooms
Provide the main flavour and soft texture of the sauce.
Béchamel or white sauce
Forms the creamy base that carries the mushrooms.
Butter
Adds richness and fat to the white sauce base.
Flour
Thickens the milk or cream into a smooth white sauce.

The step that matters

Simmer until the mushrooms are tender. Mushrooms hold a lot of water, and cooking them fully softens their texture and lets their flavour blend into the sauce. Undercooked mushrooms stay rubbery and taste raw.

Swap the mace

How well each one fits the dish's main ingredients (mushroom, sauce):

  1. Capersfits better
  2. Garlicfits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against mushroom, sauce. Candidates are from the same food group and used in at least 100 recipes.
