What each ingredient does

Sorrel
Forms the leafy base of the salad, giving its bright, sharp flavour.
Olive oil
Adds fat and smooth richness that coats the leaves and carries flavour.
Vinegar
Adds acidity that balances the richness of the dressing and sharpens the sorrel.
Mayonnaise
Provides a creamy, fatty dressing that softens the sharpness of the sorrel.
Tender lettuces
Add mild bulk and a gentle texture that dilutes the sorrel's sourness.

The step that matters

Dress just before serving. Acid in vinegar and the salt-free dressing will wilt and soften delicate sorrel leaves over time, so dressing late keeps them crisp and bright.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (sorrel, olive, vinegar, lettuce, tarragon):

  1. Beetrootfits better
  2. Shallotfits better
  3. Cucumberfits better
