What each ingredient does

Beef kidney
Forms the main body of the dish, becoming tender when cooked through briefly.
Butter
Adds richness and fat to the pan sauce, carrying flavour and giving a smooth texture.
Vinegar
Adds acidity that sharpens the flavour and balances the richness of the kidney and butter.
Mushroom ketchup
Contributes concentrated savoury depth, adding umami to the sauce.
Lemon juice
Adds fresh acidity that brightens the sauce and cuts through the fat.
Flour
Coats the slices so they brown in the pan and help thicken the sauce slightly.

The step that matters

Fry the slices on both sides until cooked through. Kidney turns tough and rubbery if overcooked, and undercooked meat is unsafe. Frying briefly over steady heat cooks it through while keeping it tender, so timing matters.

Swap the lemon

  1. Lemonthe original
  2. Limefits about as well
  3. Avocadofits less well
  4. Red currantfits less well

Fit is the average pairing score against beef, pepper, flour, butter, vinegar, mushroom, ketchup. Candidates are from the same food group and used in at least 100 recipes.
