Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Plain Veal Cutlets

Ingredients

Directions

Prepare the cutlets

  1. Trim the veal cutlets into proper shape and beat them with a rolling pin until the fibers are broken.

  2. Flour the cutlets well to prevent gravy escape.

Cook and make the sauce

  1. Fry the cutlets in a pan over medium heat for 12 to 15 minutes until amber brown and cooked through.

  2. Transfer the cutlets to a hot dish and pour off the fat from the pan.

  3. Add a slice of fresh butter to the pan and melt it.

  4. Stir in 2 teaspoons of flour and cook until well-colored.

  5. Gradually add 1 cup of gravy or boiling water.

  6. Season with pepper, salt, and lemon juice or pickle.

  7. Bring the sauce to a boil.

Serve

  1. Pour the sauce over the cutlets.

  2. Serve with optional forcemeat balls.

  3. Garnish with ham or bacon.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal cutlets
Provide the meat, which is beaten to break the fibers so it tenderizes and cooks evenly.
Flour
Coats the cutlets and, cooked in butter, thickens the gravy sauce.
Fresh butter
Adds fat for frying and richness to the pan sauce.
Gravy or boiling water
Forms the liquid base of the sauce that moistens the cutlets.
Lemon juice or pickle
Adds acidity that brightens and balances the richness of the sauce.

The step that matters

Flour the cutlets well. Flour coats the surface so it can brown and help bind the sauce, and a thin coating lets gravy wash off the meat.
