What each ingredient does

Cutlets of veal
Provide the tender meat that is cooked slowly in the gravy.
Flour
Thickens the gravy so it coats the veal and mushrooms.
Rich cream
Adds fat and richness, softening the sauce's flavour and texture.
Egg yolks
Enrich and thicken the sauce, giving it a smooth, velvety body.
Lemon juice
Adds acidity that brightens the rich cream and egg sauce.
Mushroom buttons
Add earthy flavour and a tender, savoury bite to the sauce.

The step that matters

Adding the egg yolks and cream. Egg yolks thicken when heated gently; if the sauce boils after they go in, they can scramble and turn grainy. Keep it at a gentle simmer or below once they are added.
