What each ingredient does

Onions
Sliced fried onions add sweetness and browning; pounded onions thicken and build body in the sauce.
Butter
Carries the spices and fries the onions, adding richness and flavour to the sauce.
Gravy
Provides the liquid that stews the spices and onions into a sauce.
Mutton or other meat
Forms the main substance of the curry, becoming tender through long gentle simmering.

The step that matters

Stewing the onion base without burning. Onions and spices can scorch on the bottom of the pan before they soften. Stewing gently in butter and gravy cooks out raw onion flavour and lets the spices bloom evenly, so the sauce tastes smooth rather than bitter.

Swap the onion
