Directions

Prepare the beans

  1. Trim the ends and stalks of the beans, then wash and drain them.

  2. Boil the beans in salted water until tender, about 12 to 18 minutes.

  3. Drain the beans thoroughly and place them in a clean saucepan over medium heat.

  4. Shake the beans over the heat until they are very dry and hot.

Finish and serve

  1. Add the butter, white pepper, salt, and lemon juice, tossing gently for a few minutes.

  2. If the butter separates, add a spoonful of veal gravy or boiling water.

  3. Serve immediately while hot.

What each ingredient does

French beans
Provide the main body and crisp-tender texture of the dish.
Butter
Adds richness and a glossy coating that carries the flavour.
Lemon juice
Adds acidity that brightens the buttery flavour.

The step that matters

Drying the beans before adding butter. Beans that are still wet dilute the butter and cause it to separate or slide off. Shaking them dry over heat lets the butter emulsify and cling to the beans.

Swap the white pepper

How well each one fits the dish's main ingredients (beans, butter, lemon):

  1. Parsleyfits better
  2. Thymefits better
  3. Sagefits better
  4. White pepperthe original
